Whole-Grain Zucchini Apple Bread / Muffins
Olive Oil Cooking Spray
1 ¼ cups whole-wheat flour
¼ cup spelt flour
2 tsp baking power
½ tsp baking soda
½ tbs cinnamon, ground
¼ tsp fine sea salt
1 apple, grated
1 zucchini, grated
½ cup nonfat plain Greek yogurt
¼ cup raw honey
Preheat oven to 350 degrees F. Mist 9 x 5 inch loaf pan or 12 tin muffin pan with olive oil cooking spray.
In a large bowl, mix together flours, baking powder, baking soda, cinnamon and salt.
In another bowl, mix together apple, zucchini, egg, yogurt and honey.
Mix the wet ingredients into the dry ingredients and mix until combined. Put batter into loaf pan (about 40 to 45 minutes to cook), or place a scoop of batter into each muffin tin (about 22 to 25 minutes).
