Curried Salmon Wrap

½ cup plain, low-fat yogurt
2 tbsp fresh lime juice
1 tsp lime zest
1 garlic clove, minced
1 tsp fresh ginger, minced
1 tsp curry powder
1 tsp ground coriander

¼ tsp cayenne pepper, optional
Pinch of course sea salt

A few grinds of fresh ground black pepper
1 5.5-oz can wild salmon
2 stalks celery, sliced
1⁄4 cup raisins
3 whole-grain tortillas (I like the Smart & Delicious Low Carb, High Fiber Tortillas)
1 large tomato, thinly sliced

Mixed greens

In a small bowl, mix yogurt, lime juice, lemon zest, garlic, ginger and spices.  Add salmon, celery and raisins, and combine well.  Divide salmon mixture on the three tortillas.  Top with tomato, sprouts and mixed greens.  Roll and eat …
