Apple Drop Biscuits
1 cup spelt flour
3/4 cup oat or millet flour
4 tsp baking powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/8 tsp sea salt
2 tbsp raw organic honey
1/4 cup olive oil
1 cup low-fat plain yogurt or non-fat Greek-style yogurt
1 cup apples, unpeeled, shredded with a grater
Olive oil cooking spray
SWEETENED OAT TOPPING
1/4 cup rolled oats
1 tsp olive oil
1 tsp organic evaporated cane juice
1. Preheat oven to 400 F. In a medium bowl, whisk together dry ingredients. In a small bowl, whisk together honey, oil, yogurt and apples.
2. Add wet ingredients to dry ingredients and combine. Do not over-mix.
3. Mist baking sheet with cooking spray. Drop dough by rounded tablespoon onto baking sheet, 1 inch apart. Sprinkle Sweetened Oat Topping (please see below) on each biscuit, if desired. Bake for 10 to 15 minutes or until biscuits are golden.
SWEETENED OAT TOPPING:
1. In a small bowl, mix all ingredients until combined.
